Chelsy in the Kitchen

Hello again!

��������� Christmas flew by so fast! (it always does) We enjoyed lots of special � family time� in the kitchen, w/ Christmas baking, cooking, and preparations for the holidays. Our annual Christmas Eve. Dinner is one of our favorite traditions. It is the one time of year that we get out the special china, fancy tablecloth, many candles, and the goblets. &t is a highlight in the year for our family.

 

This year, instead of doing red and green decorations, we did an ALL white theme. Mom got the idea from one her favorite cookbooks, Southern Living Christmas Cookbook. The effect was simply stunning. We turned out all the lights, and everything seemed to sparkle from the reflections of the many white candles against the glass and china.

 

�� The past several years as my siblings and I have begun working in the kitchen more, we have spend all of Christmas Eve day preparing gourmet appetizers and special desserts. This year 6 of us children were involved in the food preparations. It is really amazing how much a 6 year old can do with just a little supervision from an older one! The boys really got into it this year too, although my sister and I had to help them with some things. It was also fun to work in the kitchen together!

Carson (10) and I made Crustless Sausage Quiche. Allison (11) made Puffed Pastry Roll-ups and Brown Sugar Shortbread. Mitchell (13) made Horseradish Squares and Roasted Chocolate Covered Almond Clusters. Joshua (8) and mom made Baklava (a yummy layered sandwich -like dessert w/ philo dough, butter, sugar and nuts). Denver (6) made Shrimp Dip (with a little help) . In addition, Mom did Crab Stuffed Mushrooms, and I did Yummy Party Cheese Ball. We all worked together on dipping pretzels and peanuts into melted chocolate, and that completed our menu. Some of the dishes were new for us, some we made up, and some, like the Sausage Quiche, are family favorites.

The recipe I�m sharing this month is going to be the Sausage Quiche. I use it for basically any occasion. We have served it for tea parties, brunches, special meals, etc. It is such a breeze to make, because it is crustless!

���������������������� ~CRUSTLESS SAUSAGE QUICHE~

��� �������*4 Eggs, beaten

����������� *1 cup Sour Cream OR� Plain Yogurt

����������� *1 cup Small Curd Cottage Cheese

����������� *1/2 cup Parmesan Cheese

����������� *1/4 tsp. Salt

����������� *1 tsp. Onion Flakes

������������ *4 Tbsp. Flour

Mix above ingredients together in large mixing bowl.�

Preheat oven to 350.

������������ *4Tbsp. Butter

������������ *8oz. Mushrooms

Saut� mushrooms in the butter-drain well.� Add to above mixture.

������������ *2 cups Shredded Sharp Cheddar Cheese

������������ *1 cup Browned Sausage,

������������ �*2 Tbsp. Parsley flakes

Mix cheese and sausage with other ingredients.�

Bake in greased muffin tins (about 20- 30 minutes or until cake tester comes out clean) or in a quiche-baking dish (35-40 minutes) .
